Peanut Brittle Cookies

This is a twist on a classic peanut butter cookie! The base is oatmeal, peanut butter and brown sugar offering a soft and chewy cookie. Bits of homemade peanut brittle are scattered throughout the dough to give a little crunch, each cookie is topped with a sprinkle of sea salt.
